Protein Gela-o

When you first woke up from surgery, the surgeon or nurse caring for you probably handed you a small up of water and asked you to take a sip. Or maybe you were lucky enough that someone at your surgery thought to give you some jello. Oh 'solid' food. You've longed for it, you've craved it. And what they gave you was low protein, artificially sweetened, and didn't actually taste that good.

My friends, I have a solution for you, Protein Gella-o.

Ingredients:
Gelatin - 3 Tbsp - double if you want something that will hold it's own shape & is moldable.
Collagen - 6 Tbsp (optional, but boosts the protein with nothing processed or artificial)
Berry/fruit purree - 2 cups
Water - 4.5 cups
Lemon Juice - 1 Tbsp
Stevia Powder - optional, to taste

A note about collagen: Collagen is essentially what you would get if you mixed gelatin with alkali and left it for a while. Similar protein assay, similar health benefits, it just doesn't gel in water. I frequently add collagen powder to other foods, drinks, etc to boost my protein intake without changing flavor or texture.

Preparation:
Start by softening the gelatin & collagen by soaking it in 1.5 cups of cold water for 5-10 minutes. Boil the remaining 3 cups of water and, add to the gelatin.

Wait for the gelatin mix to cool to the point you can immerse your finger for at least 3 seconds without significant pain. Add the remaining ingredients & stir thoroughly.

Refrigerate until solidified and enjoy!
